What is a Cheese Curd? 

Cheese curds are the darlings of the cheese world. Gibbsville cheese curds are tasty little squeaky and salty morsels of goodness! They make the perfect snack for all ages! Cheese curds are one of top selling items. After years of practice, we have PERFECTED our cheese curd making process. 

As cheese is being made, curds (random weird shapes) form after the milk is acidified (using starter culture) and coagulated (using rennet). The coagulated milk is cut and heated, separating the liquid (whey) from the solids (curds).  This is done to release more moisture and give the curds a specific texture. The curds are then run through a mill and are milled into two- to three-inch pieces and then salted.

Fresh cheese curds have a mild taste with a slightly firm and rubbery texture and should squeak when eaten. The squeak can be lost when curds are refrigerated, no worries pop those delicious morsels into the microwave for a few seconds and VIOLA the squeak is back! Cheese curds can also be frozen for up to 4 months. ENJOY!
